Pork Barbecoa

Crockpot: pork loin, tbsp of cumin, parsley, garlic powder, onion powder, paprika, 2 tbsp brown sugar, 2 tsp salt, pepper to taste, bbq sauce of your choosing, about 1/2 c, 1 onion, 1 potato, 1 green pepper, red, yellow, orange, 1/2 c corn. Cook white rice to taste. I made cilantro rice. Pretty easy. 2 c long grain rice, 4 c water, cilantro, tsp olive oil, salt, pepper, once cooked add one lime worth of juice to entire mixture, fresh cilantro. Took me 25 min to make whole dinner. Crock pot cooked for about 6 hours.

Dahlia: Mom, can we go to Mexico?
Me: No we need passports.
Dahlia: oh I really wanted to go there. What's a passport?
Me: an international ID.
Dahlia: we should probably get that.

On Dahlia's 4th Birthday

4 years ago today, I birthed a beautiful, frog eyed, perfect wrinkly bundle of awesome. Dahlia, you are my jam, my sugar plum, pumpyumpyumpkin, rockstar, danger double, apple of my eye, sweet pea, rotten tomato, my cream filling, my peanut butter and pickles. You are just everything. I'm so lucky you're my girl.

Garlic Shrimp

16 Oz shrimp, raw and peeled
2 TBSP extra virgin olive oil
1 lemon juiced, zested for garnish (optional)
Salt/pepper light
Pinch red pepper seed
Handful parsley
4 cloves garlic minced/chopped

Serve warm over salad or over 2 Oz cooked linguine.  Add shredded parmesan for garnish.
